These are my favorite meals I am eating a lot this summer. Homemade summer rolls and sushi.
I put lots of fried up garlic in the summer rolls along with peanut sauce (easier to put inside instead of dipping). I don't put any rice noodles in, just lettuce and whatever veggies I have on hand.
My sushi might not be the prettiest but it still tastes like sushi, so I'm good. I like it sweet- this one has sweet potato, carrot, and baby spinach. Another favorite is cucumber and mango. And of course with tons of ginger on top!
